Conventional Oven: Season lamb to taste and preheat oven to 450 degrees. Bake at 450 degrees for 50 minutes to 1 hour or until a meat thermometer inserted into thickest portion registers 125 degrees (rare). Remove lamb from pan; cover loosely with aluminum foil, and let stand 15 minutes before slicing.
